How does one make one of these fun and interesting?

Well first off do you want to do a screenshot or a video let's play? What game do you want to play through?

Personally I think if you want to make something interesting or fun, it's setting guidelines (using shit characters in an FE game) or having a very informative let's play that pretty much covers everything you need to know about the game. Also doing something casual, like playing through a game while talking with a friend on Skype, just talking about games and things in the game you're playing (e.g. Slowbeef and Diabetus do it a lot, check them to see what I mean).

Do you want to be informative, or try to to humour the viewer? It is a screenshot LP, a video LP, or a text-only LP? You need to elaborate a bit more before anyone can really give advice. No matter what though, don't try and be someone you're not. Try and be in a good mindset also; being in a bad mood can show in your presentation, and it could turn off someone

Just try something out and see how it goes, you'll probably get the hang of it. It's not like there's a strict formula or a sure-fire way for success.

Yeah, what Shin said. It's important to at least have something about your LP that makes it different, even if it's insanely simple like being informative or doing a challenge run. You can also make polls if you want to do audience participation.

I'm doing my first LP too. I'm going the "blind-ish" route, so I'm putting my reactions to events and the gameplay and including mess-ups like deaths and restarts.

It is important to know what method (screenshot, video, text-only) you're doing, what kind of game, and whether being more informational or humorous. But I think it's most important to try it out and get people's feedback if you can. Some things you'll have to take with a grain of salt but you'll get the hang of it.
