I have an odd fascinating with the Medieval Middle East, this would be quite scratch to that itch. You could go with a holy war derived story, but I have a few reservations. We don't exactly live in as pious a time as the middle ages. I don't think most people (writers included) would be horribly sympathetic to religious warfare, even in a Medieval fantasy setting with chivalrous themes. There's still a lot of other cool stuff you could draw inspiration from, though. The First Fitna, Janissary revolts, these'd be cool things to see vaguely reimagined as fantasy plots.
