He dies in the chapter that you get Takumi in Revelations according to Fire Emblem Wiki. Unless I misunderstood, Gunter only leaves for one chapter. Scarlet is the only character that joins your party and then permanently leaves. I think, I'm not sure, but Scarlet is playable for more than one chapter, I think she's playable for 2-3 chapters before she gets killed (playable from the chapter she joins until the chapter she dies in [in her case, she dies as soon as the chapter starts and yes I know that what I just said sounds confusing]). As for Gunter, he's absent until you he rejoins you then he's unplayable during the chapter where he's the stage boss (after that chapter where he's the boss, he's playable again).
