This is such a hard decision, as all three of those games are in my top 3 Castlevania games of all time. It would be hard to decide between them...but I'm going to have to go with Aria of Sorrow. It was the first Castlevania game I ever played, and I'm most familiar with the mechanics behind the Soul System. It was really a lot of fun being able to pick a style for Soma Cruz that fit to the way the player wanted to play the game. Plus, SPOILER FOR THOSE THAT HAVEN'T PLAYED, it's the first game in the series where the player can play as Dracula. The game was a lot of fun, so it definitely ranks up there. But Order of Ecclesia and Symphony of the Night are without a doubt tied with Aria of Sorrow for first place.
