I'm personally starting with Nohr, but considering what you want to do, it's probably better you start with Hoshido and save Nohr for last.

I know about previous instances if incest in FE *cough*FE4*cough*, but that doesn't mean I'm okay with them in the game.
I don't care what anyone says, but to me, incest =/= wincest.

Maybe I just haven't played the older games enough (I only did one playthrough of FE7 and in the middle of SS), but I didn't find statuses useful for the player, only for the enemy. I admit, they did add some strategy, but it was just another situation of "oh better stay out of range of that guy until I can move a unit that can ORKO him", which happens plenty of times with other units. However, considering it seems almost confirmed they're back with a freeze stave, I just want them useful for the player. I still probably won't use it because of my paranoia of wasting it though.

Even though I personally find marrying any Gen 2 character highly disturbing (except for Robin x Lucina. I just find that pairing hilarious, but even then I don't like doing it), I won't care if it's in the game. I just won't use it. Just... don't put incest. Even if said siblings are adopted. It's just... wrong.

I chose all the Nohrian siblings... mostly because we got to see what they were actually like. It's unfortunate we weren't able to see the Hoshidan siblings in the same light today, I really want to be more interested in them but the only one I like among them so far is Takumi.

I felt like I toned it down actually. Needless to say, that was very strange and I had to double check to make sure I was getting it right...

Considering what happened to Tsubaki (now Subaki), I wouldn't be surprised if Tsukuyomi's name was changed to Sukuyomi... or maybe just Yomi.

Nohr because of the more varied objectives, the different plot, and in the battle of nature vs. nurture, I go with nurture.
Also because we've only seen the Nohrian siblings in depth and I've enjoyed what I've seen of them. Hopefully today's stream will make me more interested in the Hoshidan siblings... because the only one that interests me now is Takumi.

Hoshido Male: ...I guess Kagerou. She's the only Hosidan girl that interests me.
Hoshido Female: Tsubaki because he's a male pegasus knight. 'nuf said.
Nohr Male: ...I like no one. But if I had to, I would choose Flora because why not?
Nohr Female: Most likely Silas. After we found out the history between Corrin and Silas in the treehouse stream, there is no way I'm not pairing with him on my first playthrough.

The name Corrin itself doesn't bother me, what bothers me is that Corrin doesn't sound remotely Japanese-inspired in general. You could make the argument that Garon renamed Kamui when he was kidnapped, but the fact that Suzukaze recognized the name "Corrin" implies otherwise... other than that, I don't mind anymore. I never use the base name anyway.
I didn't exactly hear anything negative about it.
I was just curious though, what is the name Corrin a reference to? Kamui at least has a demonic association. Does Corrin have the same sort of meaning/vibe?
I think I remember hearing somewhere that "Corrin" sounds kind of like kirin.

Marriage in game? In don't want it, and I would rather prefer it remain an end game thing, but I can tolerate it. But children? CHILDREN?
If children are optional, I'm not getting them. If they're mandatory, I'm not using them. I really hope they're an end game thing that isn't involved in the main story whatsoever.
I can understand why IS put children back in... but I still can't help but cringe knowing that they're are back.
