'They' refers to a group of any gender and size. It has been used for individuals for centuries. Hir and ze are replacement for him/her and he/she, respectively. What the person wants to be considered doesn't change the fact that you read their mannerisms a different way. I think it's a respectful compromise to refer to them without specifying a gender.
