Weather is "short term", and climate is "long term". In other words, even if there are unexpected outbreaks of cold weather, if the the overall trend for that region shows that it's warming then it doesn't invalidate that region warming. Second, increasing global temperatures won't affect everything the same way. In places that are hotter, it will get hotter. Ice caps will melt, but you also get more EXTREMES. More extreme flooding when you get flooding. More extreme rainout when it's raining. More extreme droughts and heat waves when you have them. I haven't seen 3 myself, but I spoiled the plot and I'm slightly disappointed because... ...the villain was announced as The Mandarin and I was excited, but it wasn't really The Mandarin. ;_; They'll just have to make this up with some Doctor Doom in the future, I guess.
