FE, Baten Katos are perty much the only exclusions to this rule. You forgot Star Fox. In the first game Fox was in his 20s and in the latest one, he's in his late 30s. The Legend of Zelda doesn't have aging because each "Link" in it gets replaced by another Link. Don't forget that DK Junior aged into the DK we know and love today. I have the answer to the Starfox thing. It's because there was a seven year gap between the events of 64 and Adventures and a one year gap between Adventrues and Assult. And another one year gap between Assult and Command. Now we are just waiting to figure out which of the endings you could unlock in comand is the right one.
