Classic organ music for a classic battle!

Fate of the Univeres: Super Mario Galaxy

One of the best orchestra music in a Nintendo game. It gives you that "final battle" feel.

Metal Gear Solid 3: Snake Eater

"What a thrill . . ."

Super Smash Bros. Brawl: The Battlefield

I like it when it plays when Link and Mario are about to fight, a revenge song of sorts.

I quite like "Map Theme," an unused (I think it is unused but I don't know why that is the case) track from Fire Emblem 10. It is loud and well paced enough that I believe it to be epic.

Lets see;

Windmill Hut from Zelda: Ocarina of Time

Dark World from Zelda: A Link to the Past

Missing Heart from Sacred Stones

One of the songs that plays in the Subspace Emmisary in the Canyon/Wastelands-forget the name though

The Devoted from Radiant Dawn.

Many more, of course, but these are some of my most favorites.

The Brink of Death from Chrono Cross is easily my favorite boss theme ever. Wild ARMs 5 has tons of excellent tracks, but I don't know their names right off the bat.

There's a lack of 8-bit midi mentioned in this thread.

Sadface is sad. :(

Megaman 2's Dr. Wily Stage 1 music is still one of the most rockingest tracks of any video game music collection ever of all time period. For the record, it's my ringtone.

And who can forget Tetris? Russian folk music delivered in glorious 8-bit form? HELLS YEAH.

For more modern stuff, I'd say just about anything from the Guilty Gear series. It's good enough to listen to on it's own.

My favorite character and favorite theme from that game.

wow, AW:DoR. I totally forgot to mention the soundtrack for that game.

Cruel Rose (Tabitha) and Flight of The Coward (Waylon) are the best. Brenner's, Tasha's and Will's Theme are excellent as well.
