Which version should I choose?

There's a similar thread titled 'Birthrights vs Conquest/Revelations'. There are lots of advices and comparisons between the two versions.

This is really subjective in terms of defining which version is the best.

Birthright is the easier version, it doesn't compare to Conquest in any sense of difficulty nor chapter design. The story is pretty FE standard and the world has room for grinding money, experience and items.

Conquest is the darker version, it has a darker story (it had potential but, I'll live it to your experience), a better gameplay, limited resources, better maps and design.

I like Conquest more. People have mixed feelings about Conquest. Some say it's a complete disappointment, some say it's good because it had a different approach for regular FEs.

Tldr: go Conquest.

If you are still new to Fire Emblem and unsure, Birthright is the better choice.

It will ease you into the game's mechanics.

And if you are scared of losing units, there's no shame in playing in Casual Mode.

Don't let other say that Classic is the only way to play the game.

Play the mode you believe is best for you.

You played the GBA games, so Conquest (the hardest of the three) on Normal for your first playthrough should be doable. If you're only getting one version, that's what I'd recommend.
