Well, yeah, but that wouldn't affect the water until many years later, far beyond said expiration date. If it happens in the first years then the company who sold you said water either gave you a faulty product or they're shit.

Yep. That plus a lot of companies that supply bottles don't feel like making (or paying for) a seperate production line of machines in their factories that doesn't stamp expiration dates. The plastic of the bottle could expire but that'd take quite a while and quite miserable conditions.
