My Fortress tanks everything for everyone and I take care of the breathe attacks with Aegis Ward. I manage to kill them during the 5th turn with my current party. The breathe attacks can be random yes but from what I've seen they always use it on the first turn and after they use Fire/Ice/Volt Domain.
