Referencing between the two site recipes, it seems you just gotta make sure the batter is not exactly like pancake batter. You want it thinner but preferably fluffy enough so the cabbage sticks together. Benito/fish flakes (or katsuobushi) are dried and smoked fish cut into "flakes" so you can sprinkle it onto the okonomiyaki and give it a fishy and savory taste. I love it but I also like fish.
