But like... where do these rocks come from? Are they even rocks? Here's a disgusting idea: The rocks that Octoroks shoot out are their tonsil stones. ... That's it. That's the theory. They're monsters, they wouldn't have any concept of hygiene in the first place. Anyway, I like that idea, too, and it's probably the actual explanation.
