Hey, guess what? That's perfectly fine. What you do and what you prefer on your files is your own business. You know what's not fine? Telling people that pairings are bad because you don't like them. It's both petty and it's incredibly disingenuous.

Nah, Stahl!Gerome's good at the physical hard-support schtick. If you prefer that, just stick him in a class that you like that has decent pair-up bonuses and glue him to Kjelle's ass. (Just because Kjelle's the least magically-oriented of the females.)

Eh, Gerome can pretty much go two ways: abuse Vantage with Sage or straight-up hard support. I prefer the former, but YMMV. If you don't care for that, just make him a Paladin/Assassin/whatever and pair him with Kjelle in one of her many physical classes. I mean, Henry!Owain, Libra!Inigo, Gregor!Laurent, and to some extent Lon'qu!Brady and Lon'qu!Brady!Morgan are all pretty much asking for magic partners, so... Duck complains about magic Inigo. A lot.

My preference is -DEF, but YMMV. In-game, abuse Nosferatu to your heart's content. Post-game, Sage is pretty much strictly better. This is how I'd pair them, at least: FeMU (Sage) x Lon'qu!Brady (Sage) Sumia!Lucina (Sage) x Lon'qu!Brady!Morgan (Sage) Henry!Owain (Sage) x Donnel!Kjelle (Valkyrie/Dark Flier) Libra!Inigo (Sage) x Chrom!Cynthia (Sage) Gregor!Laurent (Sage) x Ricken!Severa (Sage) Stahl!Gerome (Sage) x Gaius!Noire (Dark Flier) Vaike!Nah (Manakete) x Frederick!Yarne (Berserker) (Don't even bother bringing this pair to Apotheosis.) Cynthia, Kjelle, and Severa can pretty much be interchanged freely. You could also probably just drop Gerome and Kjelle as well.

The reason why Luna and Aether is recommended is because while only one can proc at any time, their effects are synergistic. Either Aether (which is literally a stronger Luna) procs, or a normal Luna procs. A second, reliable proc is well-worth the skillslot, since it increases the chance that something procs during any combat round, and if Aether fails to do massive damage, you still have the opportunity to do additional damage. Luna+Ignis follows a similar principle. Luna+Sol is poor because the effects are non-synergistic: as opposed to damage+damage, you're doing damage+recovery; in certain cases where additional damage is prioritized (Apo), Sol's just going to be an interference.

the point isn't that they don't stack, the point is that proccing something is a heck of a lot better than proccing nothing. Assassins have a high SKL cap, so you should take advantage of it; with Luna and Ignis active, very few attacks are going to not proc either, and their effects are synergistic in that they both result in raised damage. I say go for Galeforce/Luna/Ignis/Bowfaire/Filler. It might be worth giving up Swordfaire, focus exclusively on bows, and picking something else out that will raise damage, but it's your call.

Gaius is great for Cynthia (Vantage, mods) but bad for the team composition (-1 Galeforce). Though, I'd submit that I think Chrom giving her Luna+Aether is comparable.
