Stabbing someone from the haystack sure, but remember that the haystacks are mostly in carts and you'd need a certain technique to drag them in and not leave too much blood hanging around. It's a stealth kill after all. There's also the strength factor, and you'd need to use your strength in a way to be able to quickly drag a dead weight with pretty much one hand right after the kill.
