Subordinate clauses starting in 'and' are much rarer than main clauses starting in 'and', therefore using a comma in main clauses starting in 'and' is unlikely to lead the reader to believe that a subordinate clause is starting. For most readers the Oxford comma makes the sentence easier, not harder to read. Conclusion: Use Oxford commas to indicate the start of a new clause.
