In the same way that days are different depending on what planet you are in the universe, as an example, maybe the days that Genesis refers to are a different time unit than the time unit used by humans. If you are what you eat, then aren't cannibals the only real humans? Just because you are what you eat, it doesn't follow that you aren't what you don't eat.
