You managed to shut it down completely, which is impressive.
Except for the [something] Snipe skills from my Gunner, I don't have any bind skills (I invested into Curb Attack Up on my Hexer first, so I couldn't get his Curse Mastery to the level he needs to get the binding skills).
Meaning I'll probably die of poison in this fight. XD

Seriously, if a map is bad and I have the resources to beat it in one or two turns, (See: Ailel ambush, Marianne's paralogue, foreign land and sky) I would recommend doing so, particularly in FE6. I love it as much as the next guy, but it has some real stinkers.

You should've found a free Poison-immunity Venom Ring accessory in the Labyrinth, slap that on someone. More of these can be bought if you killed enough Venomflies and Flying Lizards.

To reduce the hurt of the Fire attack it has, you can make Fire Talisman accessories reducing that damage by killing a bunch of Sunflowers for their conditional Perfect Thorn drop. You have to kill the Sunflowers with non-physical damage to get them to drop, try Freezing Snare if you got that Rafflesia skill as a Grimoire. 

Since Fire Talismans mean you can't use Venom Rings, if you don't want to try Poisoning the Chimaera yourself, then prepare the Citron Owl Bowl as your meal to reduce the infliction rate of Poison on everyone.

They are unfair and unfun, for the most part. If you don't cheese, then you'll not have a good time. I also prefer to not cheese, but I will if it enables me to get to the beter parts of a game.

Also the fact that these games give you alot of warp staves, so people WILL use those lol.

I don't think the mentioned FE5 chapters are that unfun, but they can definetly be unfair
