If Arnice or her Servans get inflicted with the status effect Bleed (basically a different version of poison that I think also weakens your attack strength), the blood splatters on the ground are purple to differentiate them from the bright blue the enemies leave when you defeat them (and which you can order your Servans to drink to restore SP). Now, as to why her Servans also bleed purple, well... I guess that really is just for the gameplay. I haven't seen any other explanations for it, at least. That could actually be it, since you need blood to summon a new Servan, as well as an item to summon them with. Now, what's interesting is that blood doubles as your EXP, so in a normal run, you have to consider if leveling up and getting new skills is more important than getting a new Servan or vice versa.
